Here's something else we made from Vegetarian Cooking for Everyone: Spring Vegetable Stew. It was so colorful and lemony. If I had it to do over, I would probably have made some kind of a grain to serve in/with/under it, but as it was, it was very tasty and simple to make.

That looks delicious and healthy! I love stuff like that with egg noodles... but then again, as it stands, it'd be perfect for Passover, haha :)
